TASTING NOTES
Exotic aromatics, luscious yellow-cling peach and passion fruit. Touch of very lightly toasted almonds. Builds and amplifies in the mouth, wisps of Szechuan and cordite widening to the bitter and sweet spice of garam masala and turmeric, then the intensity of dried apricots and salted lemon curd. Tightens up on the finish, the saltiness coming into sharp focus.

VINIFICATION
Handpicked into 10 kg cases and emptied gently into a destemmer. Selected grapes proceed in oak vats for spontaneous fermentation with wild yeast only and two days of skin contact. Aged on fine lees for 35 months in 25hl oak cask. No filtration nor fininig.

TASTING NOTES
Medium deep golden yellow. Intense bouquet, mature, compact and consistent. A hint of wood, butter, herbal notes and passion fruit, which undoubtedly reveal the variety. Dry and firm, the texture is oily, and the taste is intense, rich, also mineral. The wine is in great shape, still young. The aftertaste is very long. A great, slightly more serene Sauvignon Blanc, less hot than previous vintages.

Spontaneous fermentation with wild yeast only, with a little bit of skin contact. Fermented and matured on fine lees for 20 months in 600l French Haute Futae oak barrels. Unfined and unfiltered.

TASTING NOTES
Such exuberant passion fruit and ripe apricot aromas that they practically knock you over and lick you in the face. Glorious on the palate, like a dripping Alphonso mango – it reminds me of Scheurebe Grosses Gewächs from Franken, that with its outrageous tropical fruit it is still somehow ripe without sweetness and unmistakably European. Perhaps because the ballast is the taste of cold stone and the acidity drives a pure horizontal shaft through the core of the wine. And then it’s apricots and polished cement on the finish. There is nothing shy or holding back about this. I’d have it with Cajun blackened salmon with a ginger, chilli and mango salsa.
