An amber, slightly more red than white. Hand-picked grapes from our old pinot gris vineyard. Part whole cluster fermentation, two months of skin contact.

TASTING NOTES
Reddish gold. Smells of sumac and rooibos. Wild, complex, rose petals and smoky paprika. Everything but fruit. The palate, just as souk-suused as the nose, seems to glow, translucent. Deeply earthy. A very, very exciting wine.

VINIFICATION
Handpicked into 10 kg cases. Half grapes stay not destemmed in clusters, the other half is gently destemmed. Fermented separated under controlled temperature in oak vats with wild yeast for 2 months of skin contact. No pigeage or remontage of grapes with stems while destemmed berries are carefully sunk to the bottom. Separately pressed and joined to age in 500l oak barrels on fine less for 22 months. No finning nor filtration.
