The nonpareil character of this barrel-aged Sauvignon Blanc mirrors the finesse of the old vineyard, highlighted by spontaneous fermentation and prolonged maceration.

TASTING NOTES

Medium deep golden yellow. Medium emphasized bouquet, ripe. Honey, butter, smoke, a layer of dried herbs, wood. Distinct, diverse, but very nicely composed. Dry in the mouth, but not completely. Stronger, with higher ripe acidity. Lively and open in the mouth. An abundance of oily texture and good fruit. Caramel, butter, saltiness and full taste are attributes that convince in the mouth. Calm, with a much more moderate alcohol level than in the past, when often times heat would prevail. This time the variety and origin dominate. Long aftertaste.

VINIFICATION

Spontaneous fermentation with wild yeast only, 5 days of skin contact. Aged on fine lees for 15 months in 600l French Haute Futaie oak barrels and 30hl oak cask. Unfined and unfiltered.
