TASTING NOTES
A whirling kaleidoscope on the nose: sandalwood, saffron, paprika, vanilla pod, sumac, apricots. Creaminess and apricots on the palate, beautifully integrated, zippy acidity. The finish, at the moment, is oak-stamped, but give it a couple of years and it will be all fruit and silk. Sensuous but serious. Pears and cedar with a wonderful sandy connected-to-the-earth-ness on the very end.

VINIFICATION
Spontaneous fermentation with wild yeast only, one day of skin contact. Aged on fine lees for 18 months in 500l French Haute Futaie oak barrels. 30 percent new oak. Unfiltered and unfined.

TASTING NOTES
Deep yellow gold. A very tiny bit smoky. Rich fruit on nose and sumptuously rich on the palate. This is stunning. Breathtaking. Fills the room like the soaring sound of a string orchestra in the Royal Albert. Power and elegance. Bone-tingling. Precision and focus yet broad and rich. Spice and citrus-spun creaminess in a silky sheen. Wraps and flows, full of piercing life. I wonder how bottling will affect this …

TASTING NOTES
Deep gold. Smells of baklava and there is something of raw honeycomb, of cardamom. A tapestry of flavours where the threads almost cannot be picked out. A wine you want to smell and smell. On the palate there is a citrus-oil bitterness and apricot kernel, honey without sweetness, wax and dried grass. Intellectual and fierce. Incredible spicy length. A wine best given a quiet place and concentration.

Macerated overnight and then pressed. Fermented 80% in big barrels and 20% 600-litres. Aged for 15 months on fine lees. Unfined and unfiltered.
